  1. Beef kofta: Mix the ground beef, grated onion, garlic, parsley, cumin, paprika, red pepper flakes, coriander, kosher salt, black pepper, and olive oil together until well combined. Shape into oval koftas and arrange in a single layer in your air fryer.

  2. Air fry at 390°F for 10-13 minutes, flipping halfway through, until browned and cooked to 160°F internally.

  3. Creamy homemade hummus: Blend tahini, lemon juice, and garlic in a food processor for 45-60 seconds until light and creamy, scraping down the sides as needed.

  4. Add olive oil, cumin, and salt, then blend until combined.

  5. Add chickpeas and blend for about 2 minutes.

  6. Slowly add in ice cold water, 1 tbsp at a time, until you reach your desired consistency.

  7. Continue blending for another 3-5 minutes until smooth and fluffy!

  8. Roasted red pepper sauce: Add the roasted red peppers, a drizzle of olive oil, and salt to a blender. Blend until smooth and creamy, adding a little more olive oil as needed.

  9. To serve: Spread a generous layer of hummus onto your plate, swirl in the roasted red pepper sauce, and arrange the kofta on top. Finish with fresh chopped vegetables and herbs, and serve with warm pita bread!
